Hello veggie lovers, try this.
Ingredients (makes 2 wraps):
2 large whole wheat or spinach tortillas
½ cup hummus (store-bought or homemade)
½ cup shredded carrots
½ cup cucumber, thinly sliced into strips
½ cup red bell pepper, thinly sliced
½ cup baby spinach or mixed greens
¼ cup red cabbage, shredded (optional for crunch and color)
2 tbsp feta cheese or goat cheese (optional)
Drizzle of olive oil or balsamic glaze (optional)
Pinch of salt & black pepper
Instructions:
Lay a tortilla flat on a clean surface.
Spread 2–3 tablespoons of hummus evenly over the tortilla, leaving about ½ inch around the edges.
Layer with spinach, carrots, cucumber, bell pepper, and red cabbage.
Sprinkle a little cheese if using, and season lightly with salt & pepper.
Optional: drizzle a touch of olive oil or balsamic glaze for extra flavor.
Fold in the sides of the tortilla, then roll it up tightly like a burrito.
Slice in half on a diagonal and serve immediately.
Tips:
For extra protein, you can add grilled chicken, turkey slices, or chickpeas.
To meal prep, wrap tightly in parchment paper and store in the fridge for up to 24 hours.
