Pan-Seared Salmon with Kale and Apple Salad

Ingredients:

For the Salmon:

4 salmon fillets (about 6 ounces each)

2 tablespoons olive oil

Salt and freshly ground black pepper, to taste

1 lemon, sliced for garnish

Fresh dill or parsley for garnish (optional)

For the Kale and Apple Salad:

4 cups kale leaves, stems removed, and chopped into bite-sized pieces

2 apples, thinly sliced (choose a sweet variety like Fuji or Honeycrisp)

1/2 cup thinly sliced red onion

1/2 cup chopped toasted walnuts

1/4 cup crumbled feta cheese (optional)

For the Lemon Vinaigrette:

3 tablespoons olive oil

2 tablespoons freshly squeezed lemon juice

1 tablespoon honey or maple syrup

1 teaspoon Dijon mustard

Salt and freshly ground black pepper, to taste

Instructions:

  1. Start by preparing the Lemon Vinaigrette. In a small bowl, whisk together the olive oil, lemon juice, honey or maple syrup, Dijon mustard, salt, and pepper. Set aside.
  2. In a large mixing bowl, combine the chopped kale, sliced apples, red onion, toasted walnuts, and crumbled feta cheese (if using). Drizzle the Lemon Vinaigrette over the salad ingredients and toss well to coat. Let the salad sit while you prepare the salmon.
  3. Season both sides of the salmon fillets generously with salt and pepper.
  4. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Once the oil is hot, carefully add the salmon fillets, skin-side down. Cook for 3-4 minutes without moving them to achieve a crispy skin.
  5. Flip the salmon fillets using a spatula and cook for an additional 2-3 minutes or until the salmon reaches your desired level of doneness. The salmon should flake easily with a fork.
  6. While the salmon is cooking, arrange the kale and apple salad on serving plates.
  7. Once the salmon is cooked, remove it from the skillet and place it on top of the salad. Garnish with lemon slices and fresh dill or parsley (if desired).
  8. Serve your Pan-Seared Salmon with Kale and Apple Salad immediately, and enjoy your delicious and nutritious meal!
